As to when Guilin rice noodles was born, there were no historical records. But in all kinds of legend, it is said to be born in the Qin Dynasty. In fact, this is not simply untrue. The wooden shoes were one kind of shoes in the Spring and Autumn Period and the Warring States. Guilin Caijiadu used to be the gathering place for shoulder pole rice noodles vendors. Even today, the old men there still like to wear wooden shoes.
There was a funny thing. For the rice noodles are made from rice, in the past, the rice vat in the rice noodles workshops had not a character "Fu" (blessings) but a "Hu"(tiger) on it. They meant to use the tiger instead of the cat to scare away the rats. The twelve animals symbolizing the year of a person¡¯s birth originated from the Eastern Han Dynasty. It did not exist in the Qin Dynasty. The way people put a "Hu" on the vat maybe is a proof of rice noodles¡¯ origin in the Qin Dynasty. For the Qin Kingdom was a strong military power as fierce as the tiger, the way they used tiger to scare away the rats showed the mentality of its people.
About Guilin rice noodles, there is such a legend£ºAfter Shi Lu completed the Ling Canal, Emperor Qin Shihuang toured Guilin in incognito accompanied by the Prime Minister Li Si. The emperor liked to eat carp feeler and carp tripe to go with spirit. In order to save its descendents, the Carp King in the Li River used rice to make rice noodles instead of the carp feeler and flat noodles instead of the carp tripe (These are very similar to the stretched noodles and slices noodles of the northwest). After Emperor Qin Shihuang ate it, he thumped the table and shouted "Bravo" . Since, Guilin rice noodles were born. Later, Emperor Qin Shihuang "Burned the books and buried Confucian scholars alive" and became a tyrant. The common people didn¡¯t like him, so they changed the legend of the rice noodles like this ----- After the Ling Canal was completed, the Carp King in the Li River wanted to pass the Ling Canal to tour the Xiang River. But the Ling Canal was very narrowed, it was stuck. A Yao nationality young man saved it. The Carp King was very grateful and asked the young man what he needed for return. The young man was a filial son. He said his old mother was ill and had no appetite. So the carp king taught him the techniques to make rice noodles. After the young man¡¯s mother ate the rice noodles, she felt it tasty and digestive and recovered from her illness soon. So in the legend, it was the Yao people who made rice noodles the first. In the past, on the lattice window of the rice noodles workshop, there was always a wooden carp hung on it. This accords with these legends.
The Chinese taste can be roughly divided into several types, i.e. sour in the east and pungent in the west, salty in the north and sweet in the south. When the 500,000 Qin army conquered the hundred nationalities in the south, they were bound to leave the taste of the northwest in the south. After Emperor Qin Shihuang united China, a lot of people from the northeast emigrated to the south to defend the border areas. They also brought the northeast taste to Guilin. So we say that the composite taste of Guilin did not come into being after the Hunan people came, but after a lot of northwest and northeast people moved in. Later, it merged the taste of Hunan people, so there are many eating methods of Guilin rice noodles and it suits people almost from every parts of the country. If you are from the northwest, you can eat the sour and spicy rice noodles, if you are from the south, you can eat the light fresh pork noodles. If you are from the north, you can eat the greasy fried noodles. The spiced rice noodles of Guilin were very similar to the braised noodles with sea cucumber of the north.
Perhaps it is more convincible to explain that "Guilin rice noodles originated in Qin Dynasty" by cultural relics. If you go to look at the "clutch" of primitive pressing machine of rice noodles, you can plainly see how it looks like the farm tool "Lei" of the Warring States period. After unification of China, Qin had also unified words, weights and measures. The force adding stone is also very much like the sliding weight of steelyard of Qin. This is not a random coincidence. |
