The traditional Guilin rice noodles are demanding about quality. The rice used to press rice noodles must be those old millet stored in the warehouse for more than a year. The rice on stock was grown on both sides of the Li River, from the Baishiqiu in the upper reaches to Longmendu in the lower reaches.
