The traditional Guilin rice noodles are demanding about quality. The rice used to press rice noodles must be those old millet stored in the warehouse for more than a year. The rice on stock was grown on both sides of the Li River, from the Baishiqiu in the upper reaches to Longmendu in the lower reaches. The water used must be from the four pools, i.e. the Elephant Hill Pool, Fighting Cock Pool, Five Pine Pool and Wave Taming Pool.
